1. Add the almond flour and salt to a large mixing bowl and whisk to combine.
2. Stir in the maple syrup (if using) and coconut oil or butter. Mix until you get a soft, sandy-like texture. I find it easy just using my hands here.
3. Add the egg and mix until a soft dough comes together. See notes for egg free version.
4. Transfer the dough to a 9 inch pie plate. Use your hands to press the dough into the pie dish to form your crust. The dough may feel a little oily at this point.

1. In a 1-cup measuring pitcher, stir together 5 tablespoons of the ice water and the lemon juice.
2. This technique, traditionally used when making puff pastry and croissants, makes the dough more pliable and flaky. You can skip it if this intimidates you, but the dough will be more brittle.
3. Remove the dough from the fridge, unwrap, and place on a lightly floured piece of parchment. Roll out the dough into a 12" circle, dusting the dough lightly with cassava flour as needed, rotating and flipping it to prevent it from sticking.

1. Combine the almond flour, arrowroot, salt, coconut flour, and psyllium husks in a food processor. Give it a good whirl a few times until it's one lovely flour.
2. Cut the butter into small cubes. Add it to the food processor and pulse until the flour resembles coarse sand.
3. Add in the egg, honey, and vanilla (if using). Pulse until combined and forms a ball. Your dough should have the consistency of very soft Play-Dough. If it's crumbly you need to add 1 Tbsp. of ice-cold water at a time and if it's like too wet and similar to batter, add 1 Tbsp. arrowroot at a time until you reach the desired consistency. It's perfect when it forms a ball in the food processor.
4. Form dough into a disk and wrap with plastic wrap then place in refrigerator.
