Measure out 3 cups of juice into a very large saucepan. Add sugar and lemonjuice, mix well. Put over high heat and bring to a boil, stirring constantly.
Since mulberries don’t have natural pectin if you leave out the xanthan gum it won’t be as thick. You can add 1 1/2 tablespoons of powdered pectin to this recipe if you prefer not to use xanthan gum.
