WebSTEP 5: ROLL PUFF PASTRY. Now take out a puff pastry sheet and roll it out onto a clean surface. Make sure that the pastry is large enough to wrap all around the meat. With this done, just take out the prepared fillet from the fridge and unwrap it. Place the Fillet in the middle of the Puff Pastry Sheet.
