DirectionsStep1First blanch the cauliflower florets with enough salt, drain off the water and cool down the florets.Step2In a mixing bowl add cauliflower florets, 1/4 cup all purpose flour, 2 tbsp corn flour, salt as needed, 1/2 tsp red chilli powder and 1/2 tsp ginger garlic paste.Step3Add water little by little and mix everthing together until the florets are coated well in the batter. Let it rest for 15-20 mins.Step4Meanwhile preheat the oven at 200°C and line a baking tray. Place the prepared cauliflower florets on the baking tray.Step5Bake for 20 mins at 180°C until the bottioms have firmed up. Remove the tray, drizzle 1-2 tsp of oil and give the florets a good mix.Step6Spread them again and bake for another 15-20 mins until they are crispy and golden brown. Remove from oven.Step7Heat a pan with 2 tsp Sesame/Gingelly Oil. Add 6-8 finely chopped garlic cloves.Step8Next add 1 cubed medium onion and 1 cubed small green capsicum. Fry for 2-3 mins on medium flame.Step9Now add 1/2 tsp black pepper powder, 1 tbsp tomato ketchup, 1/2 tsp sugar and 1 tsp soy sauce. If needed, add salt.Step10Give it a good stir and quickly add the golden cauliflower.Step11Mix well so that the florets are coated with sauces. If needed, add a tbsp of water.Step12Garnish with finely chopped spring onions/coriander leaves. Remove from heat.Step13Serve hot immediately!     1. Set up a steamer basket in a pot and steam the cauliflower florets over boiling water for about 3 minutes or until they are just slightly tender when poked with a fork. If baking the gobi then steam for 1/2 the time or skip steaming completely.
    2. In a large mixing bowl whisk together the flour, cornstarch, salt, pepper, and chili powder. Add the broth or water and whisk to make a batter. If baking add 1 tablespoon of oil to the batter.
    3. Add the steamed and slightly cooled cauliflower to the batter and toss to coat evenly.
    4. Heat up oil in a large skillet or kadai (Indian cooking vessel) over medium heat. Use at least 1/4-inch of oil to pan fry or an inch or more to deep fry. When hot add the battered cauliflower in batches and fry until golden, about 5 minutes. Flip the cauliflower halfway through to cook evenly (if shallow pan frying you may need to flip more times to get all the sides). Remove fried cauliflower from pan with a slotted strainer and let drain on a paper towel lined plate. To bake the cauliflower: Spread battered cauliflower in a single layer on a parchment lined baking pan. Bake at 450 ºF for 15-20 minutes or until the breading is crisp and cauliflower tender enough.
