1. In a large mixing bowl, beat together softened butter and sugar until creamy. Add egg and vanilla and mix again until well combined, scraping sides of bowl as needed.
2. Next, alternate adding baking mix and milk until a thick dough forms. Depending on the flour blend/baking mix you use, this will take anywhere between 2.75 - 3.25 cups (as original recipe is written). I found that 3 was about the right amount. Cover and refrigerate at least 2-3 hours, preferably overnight.
3. Preheat oven to 375 degrees F (190 C). Scoop rounded 1 Tbsp amounts of dough and gently roll/form into balls. Place 2 inches apart on pan to allow for spreading.
4. Bake for 10-12 minutes or until slightly golden brown around the edges and no longer wet. They should be pretty puffy but not have a lot of color. Otherwise they'll become too dry.

1. Using softened butter and a room-temperature egg is important to provide the right texture for the dough. To soften butter, set out at room temperature for about 1 hour. Resist the temptation to microwave, which will melt the butter and make it too runny. For the egg (uncracked), place in bowl and top with warm water. Let rest 10 minutes.
2. Add softened butter to a large mixing bowl and beat with a mixer on high for 30 seconds. Then add cane sugar, vanilla extract, and room temperature egg and beat on high for 1 minute, scraping down sides as needed.
3. Next add baking powder and sea salt and mix again to combine.
4. Add almond flour, potato starch, and arrowroot starch and carefully beat on low to combine, switching to a wooden spoon as needed if it becomes difficult to mix. You’re looking for a dough that’s neither crumbly nor too soft, but easy to form in your hand without sticking. If it's too tacky at this point (which we found), add a bit more almond flour, arrowroot, and potato starch a little (~1 Tbsp) at a time and stir until a soft but moldable dough is formed (see photo).

1. Preheat the oven to 350 degrees Fahrenheit and line a baking tray with parchment paper or a cookie sheet.
2. In a large mixing bowl, combine all your ingredients and mix until well combined. If you use the egg-free option, start with 3 tablespoons of ground chia seeds. If the batter is too thin, add the extra tablespoon.
3. Using a cookie scoop or your hands, form small balls on the cookie sheet, spread 3-4 inches apart. Press each ball into a cookie shape and press down with a fork. Bake for 8-10 minutes, or until cookies are 'just' golden brown but still soft. Remove from the oven and allow to cool until soft, firm and chewy.
