2. For the crust, whisk together almond flour, sweetener, and salt in the bottom of a 9x9 inch baking pan. Add melted butter and mix in until mixture begins to clump together. Press firmly and evenly into the bottom of the pan.
3. Bake crust for 10 minutes, or until just beginning to brown around the edges. Remove and let cool.
4. Increase oven temperature to 350F.
5. Preheat oven to 350 degrees. Line 8×8-inch baking pan with parchment paper.
6. In a large mixing bowl, whisk together dry ingredients until well-combined. Add butter and egg and, using spoon or your hands, mix together until a dough has formed.
7. Transfer base mixture to prepared baking pan and, using a spoon, press into even layer, flattening and smoothing out mixture with a rubber spatula. Using a fork, prick holes into mixture. Transfer pan to oven to bake until slightly golden, about 15-18 minutes.
8. Meanwhile, to a saucepan over medium heat, heat heavy cream, monk fruit sweetener, butter, and vanilla extract. Bring mixture to a boil before reducing heat to low and simmering until mixture has slightly thickened, about 20 minutes, whisking regularly to prevent clumping. Remove saucepan from heat and set aside for 5 minutes to cool slightly.
