1. Position a rack in the center of the oven and heat the oven to 350°F. Line 2 cookie sheets with parchment or Silpats.
2. In a microwave-safe bowl, place the chocolate and heat it in 30-second bursts until melted, stirring after each heating. When most of the pieces are melted, stir until smooth then set aside to cool. If the mixture gets too cool and thick to easily incorporate, reheat a little and stir.
3. In a bowl, whisk the flour, salt, baking powder, and baking soda. Set aside. Break the eggs into a measuring cup with a spout and set aside.
4. With your hand mixer or stand mixer, beat the butter, sugar, and cocoa powder until creamy, about 2 minutes. Scrape down the bowl and the beater(s). Add the eggs one at a time, mixing until incorporated after each addition, about 30 seconds each, and add the vanilla. Continue mixing on medium speed until well blended, about 1 minute. Scrape the sides and bottom of the bowl again. Add the melted chocolate and mix until just blended. Add the flour mixture and mix on low speed until well blended.

3. Cream butter in a large bowl with an electric mixer until softened, 1-2 minutes. Add in sweetener and molasses (optional), and continue to cream until light and fluffy (about 8 minutes).
4. Add in vanilla extract and egg, mixing until just incorporated. The mixture will appear slightly 'broken' (i.e. not thoroughly smooth). With your mixer on low, add in half of your flour mixture- mixing until just incorporated. Mix in the rest.
