Servings: 6Cuisine: BritishTotal Time: 45 mins1. Chop the head of cauliflower into florets and bring a medium saucepan of water to the boil. Add the florets to the boiling water and cook them for 5 minutes. Then drain the water off and set the florets aside while you make the cheese sauce.
2. Add the butter and cornflour to a small, non-stick saucepan and place over a low heat. As the butter melts, whisk the two ingredients together until you have a smooth paste (this flour and butter mixture is called a "roux"). Add some freshly ground black pepper and cook the roux over a low heat for a minute or two.
3. Now gradually add the milk to the roux, whisking well after each addition to keep the mixture smooth and lump free. Don't fret if you do get some lumps, just stir stir stir until they disappear.
4. Once all the milk has been added the mixture will seem quite runny still. Keep in over a low-medium heat, stirring regularly and after 5-10 minutes it will really thicken up. Cornflour seems to taken a little longer to thicken than normal flour, but have faith as it will get there.
