DirectionsStep1In a large bowl, separate the egg whites. Set aside to warm to room temperature while preparing the remaining ingredients.Step2In a small bowl, mix together the brown sugar, oils and vinegar. Set aside.Step3In a medium bowl, mix together the warm water and yeast. Set the timer for 2 minutes to allow it to proof.Step4In the meantime, in a small bowl, mix together the hot water and chia and flax seeds. Set it aside (it will become a slurry mixture within a few minutes).Step5Add the brown sugar mix to the yeast, mix and set aside.Step6In a medium bowl, mix together the flours, starch, salt and baking powder. Set aside.Step7Whip the egg whites for 5-8 minutes, until stiff peaks form.Step8Slowly pour in the yeast – brown sugar mixture and add the chia slurry. Beat the mixture on medium speed for 1 minute.Step9Add the flour mixture and beat for 3 minutes. At this point the ‘bread dough’ will not resemble bread dough at all. It will be thin.Step10Grease, or spray with cooking spray, a 9" x 5" baking pan generously. Set aside.Step11Pour batter into the prepared pan.Step12Set the pan in a warm place to rise. Let rise for 30 minutes. It will still be well below the rim of the pan.Step13Preheat the oven to 350 F. Bake for 45 minutes or until an instant read thermometer reads 205 F and the crust is golden brown.Step14Let the bread cool in the pan on a wire rack for 10 minutes.Step15Remove the bread from the pan and lay the loaf on its side to cool for 15 minutes.     1. Place all of the ingredients in the bread machine in the order listed above. Be sure and beat your eggs before adding them and make a pocket on the top of the flour to add the yeast and the baking powder too (do not let it touch the wet ingredients).
    2. Place your bread machine on a "quick" cycle and choose a 1 pound loaf if needed. I put my machine on the quick cycle along with a regular crust. You may need to experiment with a different cycle if your machine doesn't have a quick cycle or a different crust doneness if the bread doesn't look quite right. You want to avoid having too many "rises" in the cycle. If you have manual settings, set the rise to once. (Twice won't hurt it too much though.)
    3. Start the bread machine and let it do it's thing!
    4. Be sure and remove the bread immediately after the machine is done baking and put it on a cooling rack. If you don't do this the bread has a tendency to collapse or to get to doughy on the bottom.
