4. Using a small cookie scoop, scoop the cookie dough onto the lined cookie sheet. Flatten each cookie with the palm of your hand to about 1/3 in (.8 cm) thick. (You can make them thicker or thinner to your liking). Place a few slivers of almond on top of each cookie.
