1. Line a rimmed baking sheet with parchment paper.
2. Reserve 2-3 tablespoons of the baking chips. Melt the remaining baking chips over a double boiler, or in 15 second increments in the microwave.
3. Using a fork, dip and coat each cracker in melted chocolate. Still using the fork, remove the cookie from the chocolate and allow any excess chocolate to drip off the cookie. Place the cookie on the prepared baking sheet.
4. Before the chocolate sets, sprinkle the top of each cooking with a few baking chips. Allow the cookies to cool and set for about 30 to 60 minutes.
