This paleo, low carb biscotti recipe is prepared with almond flour. Now sugar-free, gluten-free biscotti can be made easy with only 6 ingredients! These ginger almond biscotti are almost like gingersnaps in their crispiness and flavor! Fresh grated ginger goes into the batter, as well as toasted almonds and the usual suspects of fall spices—cinnamon, nutmeg, cloves, and allspice.
Eat the low carb ginger snap cookies while they are still warm. You can add 1/4 tsp xanthan gum to the recipe if you want chewier cookies. Either way, the key to making gluten-free ginger snaps with almond flour is to use the blanched, finely ground type of almond flour. This is needed for the best texture.
If this happens to you, add more water ½ teaspoon at a time until all of the flour is incorporated. Brown sugar may be substituted for the coconut sugar. I prefer sliced almonds that are toasted and unsalted, like this. I’ve found that sliced almonds, rather than slivered or whole almonds, really help ensure the biscotti bake evenly.
