You typically want to use semi-sweet chocolate for ganache. Ganache made with semi-sweet chocolate will be only slightly sweet but bittersweet chocolate can also be used for a less sweet version. Very dark chocolate is not desirable for ganache as it will be even less sweet once mixed with the cream.
Yes, ANY dark chocolate is NOT on the "approved list" for Paleo. It however is my one and only exception, and makes BEING on Paleo MUCH more tolerable. (a man has GOT to have at least ONE vice, right?) Anyway, back to Ghiradelli dark chocolate in particular. (wow... I am long winded) Anyway, it is creamier than Lindt 85% and, of course, 90%.
