1. Prepare the Ultimate Chocolate Cake and cool completely.
2. Toast pecans and set aside: Preheat oven to 300 degrees. Place chopped pecans on a baking sheet and toast for 7 to 8 minutes, or until fragrant. Set aside.
3. In a medium-sized saucepan, mix together the coconut cream or evaporated milk, egg yolks, butter, and sweetener and heat over medium heat. Whisk occasionally until the mixture reaches a low boil. Once boiling, whisk constantly until thickened, around 5 minutes.
4. Remove from heat and stir in the vanilla, coconut, and toasted pecans.

3. In a medium sized saucepan, add the milk and cornstarch. Whisk together to get rid of any lumps. Turn the stove top on to medium-high heat, and continue to whisk the mixture occasionally until thickened.
4. Reduce the heat the low and whisk in the yogurt, sugar, and vanilla extract. Make sure the vanilla yogurt is one that you like the flavor of by itself, since it will significantly impact the flavor of your frosting.
