Acurio Restaurantes’ Astrid y Gastón was the first Peruvian restaurant to be ranked among the World’s 50 Best Restaurants. It arrived on the list as No. 35 in 2012, climbing to No. 14 in 2013. A former chef at Acurio Restaurantes, Virgilio Martínez, went on to found his own restaurant, Central, and also made the list at No. 50 in 2013

Peru: The Cookbook by Gastón Acurio (Phaidon, 2015) is a meaty tome packed full of recipes — about 500 recipes across more than 400 pages. You’ll find everything from appetizers to desserts and drinks, from anticuchos to classic beef tripe cau cau. Phaidon has kindly given me permission to publish three of Gastón Acurio’s recipes from the book.
That is the project that Gaston Acurio has embarked on. The famous chef recently posted his selection of the first 100 recipes on Facebook. Experience Peru from your home! The dishes that define Acurio are many and varied, but they all share one theme, that is, the diversity of Peruvian cuisine.
That is why the chefs who bet on this movement with Gastón faced multiple barriers. “Nobody wanted to rent us a place to open Peruvian restaurants because they were afraid that we were going to go bankrupt,” he says. However, it was the Peruvians themselves who believed in and supported the project.
