  1. For this recipe, I used 7% pickling vinegar. It’s much stronger and requires less vinegar vs. water in the batch. I made the assumption this is what was used since the acidic solution was low.
  2. If you do not have access to picking vinegar, you can use white distilled vinegar at a 1:1 ratio. The recipe would call for 2 quarts of water and 2 quarts of regular distilled vinegar.

    1. Preheat oven to 250 degrees. Wash canning jars in hot, soapy water. Place the clean jars upside down onto a tea towel lined cookie sheet (with edges) in the oven to keep them hot.
