2. Once you have drained the gammon add the cider to the pan and add enough water to just cover the joint.
3. Add the bayleaves, cloves, peppercorns and allspice berries (if using) to the pan and bring to the boil. Reduce the heat, cover and simmer for 1 hour.
4. Remove the gammon from the pan and allow to cool for about 15 minutes. Preheat the oven to 200℃/190℃ fan/gas mark 6. Line a roasting tin with a sheet of foil.
