1. Prepare an 8x8 baking pan by lining with parchment paper, having the ends overlap the pan by about an inch on the sides. (This will allow for easy lifting and removal of the cheesecake once it sets)
2. Using a food processor or large bag, crush the cookies until they are a fine powder. Stir together with the melted butter and sugar, until the crumble becomes dough-like. Press the mixture into the bottom of the prepared pan, pushing into every corner and covering the entire bottom of the pan. Place the crust in the refrigerator to set, while preparing the filling.
3. In a large mixing bowl, or using a stand mixer, combine the cream cheese, powdered sugar, and vanilla. In a small, microwave-safe bowl, melt the pink chocolates. While mixing the cream cheese mixture on slow speed, pour in the melted pink candies or white chocolate chips. Once it is well combined, pour over the prepared crust, spreading evenly until the entire bottom crust is covered.

2. In a medium bowl, combine the flour, baking powder and salt. In a large bowl, cream the sugar and butter together on medium speed. Add in the eggs, one at a time, scraping down the bowl and beating after each addition. Beat in the vanilla. Add 1/3 of the flour mixture and beat to combine. Add 1/2 of the buttermilk and beat, followed by another 1/3 of the flour, the remaining buttermilk, then the remaining flour mixture, beating just until combined.
3. Divide the batter evenly between the 36 cups, filling each about 2/3 full.
4. Bake in the preheated oven for 15-18 minutes, or until a toothpick inserted in the middle comes out clean. Remove from the oven and allow the cupcakes to cool for 5 minutes before removing to a cooling rack to cool completely.
