1. Preheat oven to 425° F and line a baking sheet with parchment paper and combine dry seasonings in a small bowl. Set aside.
2. Place about 4 cups of water in a large stock pot and bring to a boil.
3. While water is heating up, carefully peel jicama using a pairing knife and chop into 1/4" matchsticks. Once boiling, add jicama fries to pot, cover and boil for 10 minutes.
4. Remove from heat and drain water. Either in a bowl or on the baking sheet, toss jicama fries with avocado oil and seasoning mixture. Spread out on baking sheet in an single layer and place in the oven.
