1. Bring a large pot of salted water to a boil. Prepare pasta according to the package instructions for al dente.
2. Heat the oil in a large, deep skillet or dutch oven over medium-high heat. Place the shrimp in a bowl and sprinkle with 1 teaspoon Cajun seasoning, 1/4 teaspoon garlic powder, 1/4 teaspoon kosher salt, and 1/8 teaspoon black pepper. Toss to coat. Once the oil is hot but not yet smoking, add the shrimp and cook just until they turn from gray to pink, are lightly firm, and fully cooked through, about 3 to 5 minutes. (Be careful not to overcook!) With a slotted spoon, immediately remove them to a large plate or large bowl. Reduce the skillet heat to medium.
3. Heat 1 tablespoon butter over medium heat. Add the red, orange, and green bell peppers. Cook 3 minutes, then add the mushrooms and sprinkle with 1 teaspoon Cajun seasoning and the remaining 1/4 teaspoon garlic powder, 1/2 teaspoon kosher salt, and 1/8 teaspoon black pepper. Sauté until the mushrooms are tender and have given off their liquid, about 5 additional minutes. Add the tomatoes and cook until most of their liquid has cooked off, about 3 minutes. Add two-thirds of the green onions. With a large spoon, scoop up the vegetables into the plate or bowl with the shrimp.
4. In a large liquid measuring cup, whisk together the milk and cornstarch until well combined.

1. Add salt to pot of water and bring to a boil. Cook pasta to al dente doneness. Before draining, scoop out at least 1/2 cup of the cooking water. Drain pasta and set aside.
2. While the pasta is cooking, cook the shrimp and sauce. Combine shrimp with cajun seasoning and olive oil in bowl. Toss to combine.
3. Heat large skillet over medium high heat. Add butter and melt. Add shrimp in a single layer and cook until golden brown on each side, turning only once. You may have to cook shrimp in two batches to allow enough room. Once done cooking, transfer cooked shrimp to a clean plate and reduce heat to medium low.
4. Add heavy cream to pan and scrape bottoms to release any food that is stuck to the bottom. Allow cream to bubble. Reduce heat to low and stir in parmesan cheese to melt. Add cooked pasta and shrimp and stir to coat. If sauce needs to be thinned, add pasta water, one tablespoon at a time, until desired consistency is achieved.

1. Make the cajun seasoning by adding all of the ingredients (or just the cajun seasoning if using pre-made) to a medium bowl and set aside.
2. Add the olive oil to the bottom of a deep skillet (or dutch oven) over medium-high heat. Once the oil is hot and rippling, add the diced yellow onion and smoked sausage to the pan and cook, stirring frequently, until the onion is soft and translucent, about 2-3 minutes. Add the garlic and half of the cajun seasoning and cook for another minute.
3. Add the fire roasted tomatoes (with the juice), broth and uncooked pasta to the pan. Stir until everything is combined and the liquid is mostly covering the past. Close the lid of the pan and allow it to come to a boil over medium-high heat. Once boiling, turn the heat down to medium-low and simmer for 11-12 minutes, stirring every few minutes so the pasta doesn’t get stuck together or to the bottom of the pan.
4. While the pasta is cooking, add the shrimp to the remaining cajun seasoning and toss to coat.
