1. Heat the olive oil over medium high heat. Add the tomatoes, garlic, red pepper flakes, and oregano. Cook for 3-5 minutes until fragrant. Add the pasta, vegetable broth, and basil.
2. Bring to a boil and then turn down to a simmer. Cook for 10-12 minutes until the pasta is tender and all (or most) or the liquid is absorbed. I recommend stirring it with thongs throughout to make sure nothing sticks.
3. Season with salt and pepper. Toss with mozzarella and drizzle balsamic on top to serve. You can also top with some extra fresh basil.
