2. In a large bowl, whisk together the eggs, milk, orange juice, orange zest, sugar, cinnamon and vanilla extract. Add the bread cubes and stir until the bread is well soaked. Pour the bread mixture into the prepared baking dish, including any remaining liquids, and spread it into an even layer.
3. Bake the French toast for 30 to 40 minutes until the custard is fully cooked and the top begins to crisp slightly. Remove the French toast from the oven and top it with the orange segments, maple syrup and powdered sugar. Serve immediately.
4. This French toast can be made, up until the baking point, one day in advance. Cover it securely with plastic wrap and refrigerate it overnight. When ready to serve, preheat the oven and remove the French toast from the refrigerator. Remove the plastic wrap and bake it until it is cooked through.
