1. In a saucepan over medium heat, add chopped strawberries, granulated sugar, lemon juice, and cornstarch. Stir until sugar has dissolved. Bring to a boil, then reduce heat to medium-low. Simmer for 10 minutes, stirring occasionally.
2. Remove from heat and gently mash strawberries with a potato masher until desired consistency is reached. Return to heat and cook for another 5-7 minutes, or until mixture has reduced slightly. The mixture should thickly coat the back of a spoon (and will continue to thicken as it cools).
3. Remove from heat, transfer to jars, and allow to cool completely before adding lids. Store for up to 1 year in freezer, or up to 3 weeks in the refrigerator.

1. Prepare your jars and/or freezer containers: wash well and pour boiling water into jars and let them sit while making the jam.
2. Prepare your fruit: hull strawberries and partially run through a food processor to make the crushing go quicker; other berries can just be crushed with a potato masher, a couple cups at a time. Other fruit like peaches and nectarines will need to be chopped finely.
3. Make the jam: Add sugar and pectin to a large bowl and stir together well. Add your prepared fruit and stir for 3 minutes.
4. Pour the jam into clean jars, leaving 1/2 to 1 inch headspace (for freezer expansion); place lids on jars and let the jars sit undisturbed for 30 minutes.
