1. In a bowl coarsely mash the strawberries using a potato masher or a fork, then place into a saucepan. Cook the berries over medium heat stirring until they begin to thicken (this should take about 6-7 minutes).
2. Reduce heat to low and mix in sugar (start with 1-1/2 cups) and 1-2 teaspoons lemon juice, add in more sugar if desired. Increase the heat to medium and simmer gently until the mixture thickens and mounds on the spoon (about 20-22 minutes) stirring frequently. Remove from heat and cool just slightly.
3. Place in refrigerator for rapid jelling (the mixture will thicken more while chilling). When cooled divide into plastic containers, seal tightly with a lid and freeze.
