1. Melt 8 tablespoons butter in a saucepan. Whisk in flour and chopped onion - saute for 1-2 minutes. Slowly stir in wine and whisk until smooth. Add salt and allow to simmer on low heat for 7-10 minutes. Add cream and allow to simmer for another five minutes. Remove the pan from heat and set aside.
2. Season shrimp and oysters with seasonings. In a very large sauce pan, melt 2 tablespoons butter over medium/high heat. Turn the temp down to medium and add shrimp, scallops and cajun seasoning. Saute for about 4-5 minutes, then add spinach, mushrooms, garlic, green onion and salt. Saute until mushrooms and spinach soften, then scoop up everything in the pan with a slotted spoon and fold it in the sauce. If needed warm up the sauce, then pour it into heatproof dish, top with grated cheese, and place under a broiler until cheese melts. Stir the cheese in and add additional salt if desired. Serve with crusty sourdough bread for dipping.

1. In a medium sauce pan over low heat combine Velveeta, Swiss, soup, milk, cayenne, and paprika until melted and smooth. Stir regularly and keep the heat low to prevent scorching.
2. When fully melted, stir in the chopped lobster and shrimp.
3. If you have a sourdough bread bowl, carveout the middle to create a bowl. Place the prepared bread bowl, scraps from the inside, and any other sliced bread for toasting on a cookie sheet. Drizzle with olive oil and broil on low until to desired level.
4. Fill the toasty bread bowl with Ultimate Fondue. There will be more than enough to fill the bread bowl. Garnish with red pepper and green onion, if desired, and serve with the toasted bread.
