3. Pour wet over dry and gently stir until just combined (do not overmix). Let batter rest for 3-5 minutes while you preheat your skillet to medium (batter will be thick). Grease skillet lightly with buttery coconut oil or oil of choice.
4. Use an ice cream scoop or 1/4 cup scoop to place batter in a hot pan. Gently spread the batter with the scoop to flatten slightly (Pancakes will not spread much on their own)

2. After 10 minutes, lightly coat a griddle with butter or olive oil and place over medium heat. Once the pan is hot, add approximately 1/4 cup of the batter to the griddle for each pancake. Immediately add 5-6 blueberries or chocolate chips per pancake and cook for 2-4 minutes until pancakes slightly puff up and you see a few bubbles along the edges.
3. Flip cakes and cook until golden brown on underside. If you find that pancakes are browning too quickly then you need to lower the heat. I normally start on medium heat, then decrease to medium low later so that my pancakes don't burn. If at any point your griddle starts smoking or if your pancakes are quickly burning, it means your pan is too hot.
4. Wipe skillet clean and repeat with more oil and remaining batter. Makes 6 pancakes total. Serves 2, 3 pancakes each.

3. Place 1/4 of the butter on a pan. On medium heat, heat up the pan. Ladle one-quarter of the pancake batter and bake for 3 to 4 minutes. I usually cover the pan to keep the moist in. When the pancake is firm enough, flip it and bake for another minute.
4. Repeat three more times. Optionally, add blueberries to a pancake while it is being baked. Top the pancakes with more greek yogurt and blueberries or keto Nutella. Enjoy!
