1. Preheat oven to 350 °F. Prepare a baking sheet with parchment paper.
2. In a large bowl, whisk together cream cheese and ricotta until smooth. Add the eggs and whisk in well.
3. Add all the remaining ingredients and whisk until smooth. The dough will still feel sticky at this point. Let rest for 5 minutes for the moisture to be absorbed.
4. With wet hands shape the dough into roughly a 4"x7" loaf. Place on your prepared baking sheet and with a small knife, cut 3 diagonal lines on the top and pull each line a little bit apart (this will make the bread look artisan!)

1. In a large mixing bowl, combine flour, salt and yeast. Pour in warm water and stir with a wooden spoon until well combined. The dough will be sticky, but that’s how we want it!
2. Cover the bowl with plastic wrap and allow to rise on your counter, at room temperature, for 6 - 15 hours (I either make it first thing in the morning to bake later for dinner, or make it the night before and let it rise overnight).
3. Heat oven to 450 degrees F.
4. Lightly flour your hands and a work surface and scoop dough out onto floured surface. Shape the dough into a ball, the best you can. Sprinkle a tiny bit of flour on top of the dough ball and place it on a piece of parchment paper. Cover the dough lightly with plastic wrap.

1. Activate the yeast: Pour warm water into a small bowl. Sprinkle yeast on top. Add sugar and give the mixture a small stir. Place the bowl in a warm place for about 10-15 minutes. Be patient! If yeast is activated, you will see foam on top of the mixture, and even a few small bubbles. Also, if you take sniff, it will smell very much like yeast.
2. In a large bowl, whisk together flour, and salt. Add water and yeast mixture and mix until just combined into a sticky, shaggy dough. Cover the bowl with plastic wrap and let sit for 12-18 hours. After the dough has risen for at least 12 but preferably 18 hours, it should look loose and very moist with plenty of bubbles on the surface.
3. When the dough is ready, preheat the oven to 450˚F. Place a 6 to 8qt dutch oven or cast iron pot in the oven to heat up for 30 minutes before baking.
4. Place dough on a well floured surface and, using plenty of flour on your hands, gently pat it into a ball shape. Score the top of the dough as desired.
