Total Time: 1 hr 15 minsCategory: Instant PotCalories: 353 per serving1. Peel the onion and chop into smallish pieces. Measure the cumin and chili powder or Ancho chile powder. Heat the oil in the pressure cooker on saute setting, add the onions and cook 2-3 minutes or until they start to soften, then add the ground cumin and chili powder and cook about a minute more.
2. While onions cook, trim visible fat from the flank steak and cut each steak lengthwise and then again crosswise. (I cut it so the shredded pieces of meat wouldn’t be too long to eat easily in a taco.)
3. Add the flank steak pieces to the pressure cooker with the red and green salsa, lock the lid in place, set to MANUAL HIGH PRESSURE (or bring to high pressure on the stove) and cook at high pressure for 45 minutes. You can use the quick release method to release the pressure, but if you have time I recommend doing 15 minutes natural release and then quick release.
4. Use a slotted spoon to scoop out the meat, leaving the sauce in the pressure cooker. (Some brands of salsa have more water than others; if you think the sauce looks too thin you can turn the pressure cooker to Saute or Simmer – or medium low on the stove – and cook off some of the liquid.)

Brown the steak in the oil for 2 minutes on each side. Move the steak to the side and deglaze the pot with the broth.

3. Cover the Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 50 minutes. When the time is up let the pot sit for 15 minutes and then move the valve to venting to release any remaining pressure. Remove the lid.
4. Use tongs to place steak on a cutting board. Let it sit for 5 minutes. Then slice the steak against the grain. Drizzle juices from Instant Pot over the steak. Eat and enjoy!
