This balsamic fig glaze recipe is a savory fig preserve made with fresh figs. It is very easy to make with a few ingredients, balsamic vinegar, nutmeg, and sugar. It keeps for the winter and it is a unique delicacy to serve at Christmas.
Add balsamic vinegar to a small saucepan over medium heat and bring to a gentle boil. (If you want glaze to be sweeter, add Besti or other sweetener that dissolves easily to the saucepan when you add the balsamic vinegar.) Reduce heat to medium-low and simmer for about 20 minutes, until volume reduces by half and it coats the back of a spoon.
Add shallots and season with 1/4 teaspoon salt. Sauté until soft and translucent, about 3-4 minutes. Add in garlic and sauté until fragrant, 30 seconds- 1 minute. Add in fig preserves, honey, balsamic vinegar and sprig of thyme. Increase heat to bring mixture to a boil and immediately reduce heat to maintain a simmer.
You only need one ingredient — a bottle of balsamic vinegar — for the very best balsamic glaze. Although a lot of recipes call for added sweetener (often in the form of granulated sugar or honey), balsamic vinegar is naturally sweet, and becomes even sweeter as it cooks down into a glaze.
