Total Time: 48 hrs 40 minsCategory: CondimentsCalories: 11 per serving1. Mix the cabbage, carrots, onion, peppers, oregano, and salt in a large mixing bowl. Let rest for 30 minutes to begin releasing moisture.
2. Sanitize a quart size (4 cup) mason jar including lid with boiling hot water. Be careful to not burn yourself.
3. Pack the shredded vegetables into the mason jar, pressing down to tightly pack and release water. If the vegetables aren't covered with water, add a little bit of distilled water so they are covered. Optional: add sanitized glass weight to keep the vegetables submerged.
4. Put a lid over the jar but do not screw it on to tightly seal as gas will build up the pressure in the jars if it can't be released. Alternatively use a specialty fermentation lid.

Total Time: 15 minsCategory: CondimentCalories: 21 per serving1. Grate or finely chop the cabbage, onion and carrots.
2. Toss the grated vegetables in a bowl with oregano, hot pepper and salt.
3. Pack the mixture into a jar or two jars for fermentation leaving at least 1-inch of headroom (for bubbling.) Use a spoon to really press all the cabbage into the jars so that there are no air bubbles.
4. If the cabbage hasn’t released enough liquid to completely submerge the vegetables, then leave it for 4-12 hours, and press again. If it still hasn’t released enough liquid, then add a bit of purified water. The goal is to make sure the cabbage is kept under the liquid.
