1. Put the flour in the bowl of a stand mixer fitted with a dough hook.
2. With the mixer running on low speed, add the cold 1-inch pieces of butter a few pieces at a time. The dough hook will "cut" the butter into the flour. Once the butter is cut throughout the flour (it will look like very coarse meal), stop the mixer. You do not want to knead the dough.
3. Combine the salt and the water together. Turn the mixer back on low speed and add the water/salt mixture to the mixing bowl. Mix only until the dough comes together enough to handle. You should still see lumps of butter and the dough will look like a pie dough.
4. Form the dough into a square and let it rest in the refrigerator for 10 minutes. You can place it on a sheet pan or wrap in a piece of plastic wrap while it rests.

1. To make the dough using a stand mixer: Using the flat beater attachment, mix the flour and cold butter on low speed until the mixture is unevenly crumbly; the butter cubes will break down somewhat, but you'll see some larger chunks remaining. To make the dough by hand: In a large mixing bowl, press the butter cubes between your fingers and thumbs to create flat butter flakes. Toss the butter flakes with the flour to ensure they’re evenly coated.
2. In a small bowl, dissolve the salt in the water and add to the flour/butter mixture.
3. Mix briefly, just until the dough begins to form a shaggy mass. It should be a bit crumbly (rather than totally cohesive), and small chunks of butter will have remained intact.
4. To roll and fold the dough: Turn the dough onto a lightly floured work surface and fold it over on itself until it comes together; a bench knife or bowl scraper can be a helpful tool here.

1. Pulse together the flour and butter in a food processor for only a few times until pieces of butter the size of large peas or larger remain in the flour. Transfer to a large bowl.
2. Add the sour cream and toss together. Try to basically tumble the ingredients together until the flour absorbs the sour cream and the butter pieces are still very distinct.
3. Press the dough together into a ball and flatten into a round about an inch or so thick on a floured counter top.
4. Fold this round twice before roughly shaping into a square.
