1. Preheat the oven to 300 degrees F.
2. Toss the candied lemon and orange peel with about 1/4 cup all-purpose flour to keep it from sticking together and then pulse in a food processor until finely minced. Set aside.
3. In a large mixing bowl, beat the eggs until foamy. Add the sugar, honey and vanilla extract and beat until combined.
4. Add the ground almonds and hazelnuts, salt, baking powder, Lebkuchengewürz, and candied lemon and orange peels and stir vigorously until thoroughly combined. (You can use a stand mixer fitted with the paddle attachment and beat for about 2 minutes). The mixture will be wet but if it is too thin to scoop onto the oblaten add some more almond or hazelnut meal.

1. Put the whole hazelnuts, almonds, candied lemon peels, and candied orange peels into your food processor and chop them up until the mixture is loose and coarsely grated. The texture doesn't have to be super finely ground - but there should be no overly large chunks of nut remaining.
2. Crack the eggs into a large bowl and add the sugar as well as the honey. Mix everything together with your electric mixer until you have a creamy mixture that has some bubbles. Set your electric mixer aside.
3. Fold the gingerbread spice, cinnamon, and the content from your food processor into the egg mixture in small increments. This works best with a spatula or a large spoon. Mix until everything is well combined.
4. Line your baking sheets with parchment paper and preheat the oven to 300 degrees Fahrenheit.
