My daughter worked with a caterer one summer and learned how to make puff pastry. Ever since she first noticed the low carb mozzarella stromboli dough she thought it could be made into a low carb puff pastry. To be honest I didn’t really see how until now but I’m calling this one a Lighter Low Carb Pastry Crust THM S Low Carb.
For the dry ingredients, we are using almond flour, vital wheat gluten, oat fiber, xanthan gum, baking powder, and salt. The wheat gluten makes the dough elastic and helps form the flakey layers of the puff pastry; it cannot be omitted nor replaced.
Lightly roll out the puff pastry and dive it into 4×4 in. pieces. Assemble the pastry pieces in a single layer on a lined baking sheet. Place a handful of pears in the center of the puff pastry squares, leaving the edges uncovered. In a small bowl, whisk the egg with 1 tsp of water. Brush the tops of the tartlets with the egg wash.
