1. Add all the vegetables to a large bowl, cover with water and stir in the salt. Cover with a towel and leave for 1 hour. After 1 hour drain the vegetables.
2. Add the drained vegetables, vinegar, sugar, turmeric, mustard powder, ground ginger and nutmeg to a large saucepan and bring to a simmer. Simmer uncovered about 10 minutes until the vegetables are tender.
3. While the vegetables are cooking, sterilize the jars. You will need 1 - 32 ounce/1 liter jar.
4. Fill a large pan (a pasta pan works well) with water and completely submerge the jars upright, lids as well. Bring the water to a boil for 10 minutes. Keep the jars hot until ready to use, then remove from the water using tongs. Set on a towel to dry.

1. Prepare the vegetables. Break the cauliflower into small florets, trim the beans and cut into short lengths. Peel and quarter the shallots or onions. Cut the courgettes into half or quarters lengthways then thickly slice. If using cucumber cut in half lengthwise, scoop out and discard the seeds then cut in half again and slice.
2. Layer the vegetables in a bowl sprinkling with the salt as you layer them. Toss together to coat with the salt. Cover and allow to stand for 24 hours.
3. Drain the vegetables and rinse very well in cold water. Drain and allow to dry.
4. Mix the flour, sugar, mustard powder, turmeric and ginger together in a pan with a little of the vinegar to form a smooth paste. Make sure that you get the mixture lump free at this stage.
