As I just said, making a keto lentil soup is easy, especially compared to some soups out there. In my recipe, I used red lentils which have the same nutritional value as other lentils. You do not need to soak or pre-cook the lentls before starting. Start by setting up your soup pot, and adding the onions and vegetable oil to the pot.
Preparation In a large pot, sauté the diced red onion and minced garlic in 1 tablespoon of olive oil until translucent, about 5 minutes. Add the water, green lentils, and salt to the large pot. Bring to a boil. Cover with lid and simmer for 10 minutes.
Add the cooked lentils directly into the cooked rice (to cook Arborio rice, just put double the amount of water as rice in a pot, bring to a boil, then lower the heat to the minimum and cook with the lid on until cooked–about 25 minutes; do not stir). Mix together then add some olive oil.
