1. In a large mixing bowl combine, coleslaw and diced green onions . Stir until scallions are incorporated into coleslaw mix.
2. In a small mixing bowl combine, light mayo, non fat plain or Greek yogurt, salad dressing, sugar substitute, vinegar, salt, and pepper. Whisk until all ingredients have been well combined.
3. Pour dressing over coleslaw. Stir until the dressing has been well combined with coleslaw mix. Fold in cilantro, if using.
4. Cover and place in the refrigerator for at least 30 minutes or overnight before serving. This allows the coleslaw to absorb the dressing and all the flavors.
