Cover your homemade ravioli dough with the second sheet that you halved earlier. Use the ravioli cutter to make your shapes. Lightly flour your pasta so they do not stick to the counter or in the water. Drop in boiling water and boil for about 3 to 5 minutes.
Slice the mozzarella cheese slices diagonally so each square creates two triangles. Place the slices on a silicone baking sheet and bake until the edges are brown. Remove from the oven and place 1 tablespoon of the sausage filling on one side of the baked cheese shells, then carefully pull the other side over to create a ravioli pocket.
