Category: Entree, Main DishServings: 12Total Time: 2 hrs1. Preheat oven to 375F degrees. Grease 9 x 13 glass baking dish (metal does not work well; crust will stick) and line with parchment paper.
2. For crust, in medium bowl, whisk cream cheese until smooth and creamy. Whisk in eggs until mixture is well-blended and smooth. Add the Parmesan cheese and seasonings. Stir in mozzarella until completely moistened. Spread mixture evenly over parchment paper.
3. Bake for about 20 minutes, until evenly browned, but not too dark.
4. Let cool for a few minutes on a wire rack. When slightly cool, I “cheat” and lift the crust using the parchment paper and place all in the freezer for about 30 minutes until completely cooled. If you have plenty of time, you can cool the crust on the counter and then leave in the refrigerator for several hours uncovered. The goal is for the crust to dry out enough that it will be crispy/chewy and you can pick up with your hands.

Calories: 166 per servingCategory: Appetizer, Dinner, Lunch1. Prepare the optional sauce and set it aside while you work. Preheat the oven to 425 and prep a baking sheet with parchment paper. If you are not using a baking sheet, simply set out a large sheet of parchment paper to prepare the pizza on. This is a good recipe to bake on a lower rack in the oven so that the crust can evenly bake.
2. In a medium microwave safe bowl, microwave the mozzarella cheese and the cream cheese for 90 seconds (or until melted), stopping every 30 seconds to stir. When the ingredients have melted remove the bowl from the microwave and allow the ingredients to cool for a few minutes.
3. Next, stir in the eggs and the flour. When you are able to, use your hands to to help mix the dough. This dough is not like a normal dough to work with as it has a wetter consistency. I have a couple of tips shared above that can help if needed. Allow the dough to sit for a few minutes so that the cheese absorbs the coconut flour.
4. Next, transfer the dough to the prepped baking sheet or parchment paper. Using a spoon, spread the mixture out into a round or rectangle shape until it’s about ¼” thick. Use a fork to poke holes into the dough to allow for the dough to rise properly during the baking process (we are not using a leavener). Bake the pizza crust for 8-10 minutes, until golden brown.

Total Time: 30 minsCategory: DinnerCalories: 67 per serving1. Preheat oven to 220°C (430°F).
2. If you want to use active dried yeast in this recipe (recommended for a puffy crust and lovely bread flavor), you must reactivate the yeast. In a bowl, add the yeast with 1 teaspoon of sugar (don't worry, the yeast consumes all the sugar, and no sugar is left at the end of the recipe!). Cover with lukewarm water (think bath temperature, not burning water, or it would kill the yeast). Stir and set aside 10 minutes until the yeast is activated.
3. You can make the dough the day before and store it in the fridge in an airtight container or freeze the prebaked pizza base.
