1. As you choose your fish, pick fresh fish on ice at your grocery store. Choose fish with clear eyes (fish that have cloudy eyes are less fresh). If you can smell the fish, it should smell like the sea and not fishy. Have the fishmonger clean the fish, also removing the gills and tail.
2. Heat your charcoal. I like to use natural chunk charcoal and fill about 50-60% of my chimney starter. This fills about 40-50% of my small charcoal grill with about 2-3 inches distance from coals to the fish.

1. Remove your fish from the fridge and let it stand at room temperature for 20 minutes. Rinse and pat dry with paper towels.
2. Lightly drizzle the fish all over with the olive oil and season generously, inside and out, with the salt & freshly ground pepper. To properly season meat, don't get your hand too close when sprinkling seasoning on - if you pull your hand back a bit and sprinkle salt from a little higher up you will get more even coverage. Stuff the cavity of the fish with the lemon discs, garlic cloves, and thyme sprigs.
3. Preheat the grill to medium-high heat and use tongs to brush the cleaned, preheated grill grates with an oil drenched paper towel.
4. Carefully transfer the fish to the grill so the aromatics don't fall out and grill for 8-10 minutes over medium-high heat. Don't attempt to move the fish. When the first side is done, it will be lightly charred on the bottom and the skin will release easily from the grate. Flip the fish over and and grill until cooked through and the flesh is white throughout, about another 8-10 minutes.

1. Begin by preparing your grill. Set the temperature to about 400-425 degrees over indirect heat and allow your grill to preheat while you prepare the salmon.
2. Wipe the entire exterior and interior cavity of your salmon with paper towels. Season the interior with half of the salt and pepper. Layer in the sliced shallots, 2 of the sliced lemons, and dill fronds.
3. Using a sharp knife, cut 3-4 diagonal slices into the top of the salmon. Drizzle the top of the fish with the melted butter and season with the rest of the salt and pepper.
4. Transfer your fish directly to the grill grates, close the lid and roast for 30 minutes. Cut the last lemon in half and squeeze half of it over the top of the salmon. The time can vary 15 minutes or so in either direction depending on how thick your fish is.
