2. Add the water, yellow split peas, bay leaf, salt, cumin and stir to combine. Continue cooking until the mixture reaches a simmer. Then reduce the heat to medium-low and simmer for 20-25 minutes, until the yellow split peas have completely softened.
3. Discard the bay leaf. Then, using an immersion blender (or see alternatives below), purée the mixture until smooth.
4. Remove saucepan from heat. Stir in the lemon juice and remaining 2 tablespoons olive oil until combined. Then taste the dip, and season with extra salt and/or lemon juice if needed. The fava will thicken considerably as it cools.

2. In a pot, pour the 1/4 cup veggie broth and sauté the onion until soft. Add split peas and stir for a couple of minutes. Add the 1 cup broth, water, and salt and pepper to taste.
3. Bring to a boil and simmer over very low heat until split peas are totally soft, about 30 minutes. Check periodically to see if more water is needed.
4. Remove from stove and use an immersion blender to smooth it out. You can also allow to cool and pour into a food processor or blender. Add lemon juice, stir to incorporate and top with parsley to serve. Use as a dip or on a sandwich! Or just eat with a spoon!
