1. Preheat oven to 400. Line a muffin tin with muffin liners. I also spray mine with cooking spray so they don’t stick. (Especially since this recipe doesn’t have butter or oil.)
2. Mix the flour, baking soda and salt in a large bowl.
3. In a separate bowl, mix the wet ingredients: yogurt, applesauce, honey, egg and vanilla. Stir well to combine.
4. Add the wet ingredients to the dry and stir to combine. Fold in the granola but be careful not to overmix.

4. Add the pumpkin seeds, sunflower seeds, erythritol, and golden flaxseed meal. Pulse just until everything is mixed well. Don't over-process! You want to have plenty of nut pieces remaining, and most of the seeds should be intact.
