1. Preheat oven to 375 degrees F. Line a cookie sheet with a silicone baking mat or parchment paper.
2. In a large bowl beat the butter and brown sugar until light and fluffy. Add in the egg and molasses and beat until smooth, scraping down sides of bowl as needed.
3. In a separate bowl sift together the flour, baking soda, cinnamon, ginger, cloves and salt. Add the dry ingredients to the wet ingredients and mix just until combined (do not over mix!).
4. Roll the cookie dough into tablespoon size balls and roll in the granulated sugar.

3. In large bowl using a stand mixer with paddle attachment or electric hand mixer, cream together sugars and with the softened coconut oil and butter, scraping down the sides of the bowl as necessary. It can take a little bit longer to cream the coconut oil, but just be patient.
4. Add in the molasses, egg and vanilla to large bowl and mix on low-medium speed until combined.
