2. In a large bowl, whisk the eggs. Add the cheddar cheese, parmesan cheese, garlic, flour, spices, and chopped broccoli to the bowl. Stir until fully combined.
3. Heat oil in a non-stick pan over medium-high heat. Scoop 1/4 cup of batter and drop into the pan, gently flattening with a spoon, to about ½ inch thickness.
4. Cook each fritter for 2 to 3 minutes per side until golden brown. Repeat with remaining Batter.
