The recipe for Easy Carolina BBQ Pulled Pork uses the slow cooker or crock pot. This method of cooking allows you to go about your business for the day (run your errands, take a nap, lay out at the pool, whatever!) while ensuring the pork butt, or pork shoulder, is cooked at a consistently low temperature for a lengthy amount of time (ie: slow).
Pulled pork by itself is low carb, but the added sauce typically contains sugar. This shredded pork mix uses a sauce sweetened with stevia. Mix all sauce ingredients (everything except the bay leaf and the pork roast) until smooth. If you have extra time, marinate the pork in the sauce overnight or for several hours before cooking.
For the pulled pork: In a small bowl, combine the onion powder, garlic powder, salt, pepper, paprika, allspice, celery salt, cloves, and mustard powder. Mix well. Rub the spice mixture all over your pork. Add the water to a large crock pot. Place the spice rubbed pork in the pot and cover.
Stir together some cumin, garlic powder, onion powder, salt, parsley, and paprika and rub it all over the pork to coat. Pour your favorite low carb beer into the bottom of the slow cooker.
