1. Make marinade: In a small bowl, whisk together minced garlic and jalapeno, ancho chile powder, lime juice, soy sauce, and cilantro. Put marinade and steak in large resealable bag or bowl. Be sure steak is completely covered in marinade. Seal bag or cover bowl, and refrigerate for an hour or two.
2. Grill: Preheat grill to medium-high heat (roughly 400 or more degrees). Place steak directly over heat and grill for 3 to 5 minutes per side (depending on thickness), until medium rare (130 degrees).
3. Slice and serve: Let steak rest for 5 minutes. Slice meat against the grain (perpendicular to lines) to keep meat tender. Serve with low-carb tortillas (or lettuce wraps), diced onion, tomato (or salsa), and avocado. Other toppings could include crumbled cotija cheese, sliced radishes and additional cilantro.

1. Preheat oven to 375°F. In a bowl, thoroughly mix egg white and cheese (30 seconds). With your hands, thinly spread/shape the mixture into equal sized circles on a sheet pan lined with parchment paper.
2. Bake in center of preheated oven for 15 minutes. Remove, carefully flip each tostada and return to oven for 10 minutes.
3. Remove and pile on your choice of toppings (I used shredded chicken and more cheese—optionally, return to oven for 1-2 minutes to melt cheese).
4. Garnish with your choice of condiments (like guacamole, sour cream, salsa or green onions) and enjoy (see notes for storage/prep tips)!
