WebMay 16, 2018 · An easy grilled flank steak is transformed into juicy, tender, and flavorful Carne Asada — with just 5 minutes of prep work! Thanks to …

1. Place flank steak in a large (9 x 13-inch) baking dish.
2. Whisk together orange juice, lime juice, olive oil, salt, garlic powder, cumin, and oregano. Pour over steak. Cover and chill for at least 1 hour (or up to 8 hours), turning occasionally.
3. Remove steak from marinade. Discard marinade.
4. Prepare a hot fire by piling charcoal on one side of grill, leaving other side empty. (For gas grills, only light one side.) Place food grate on grill. Place steak on lit side of grill. Grill, covered with grill lid, over medium-high heat (350° to 400°) about 20 minutes, flipping halfway through. If you are cooking a smaller flank steak (about 1 lb.), it may only need about 15 minutes on the grill.

1. In a medium mixing bowl, whisk together the garlic, lime juice, orange juice, jalapeño (if using), cilantro, oil, chili powder, cumin and oregano until combined.
2. Place the flank steak in a shallow baking dish, pour the marinade evenly over the steak, and toss the steak until it is evenly coated in the marinade. (Alternately, you can combine the steak and marinade in a large Ziplock or Stasher bag and toss to coat.) Cover and refrigerate for 2 to 4 hours to marinate.
3. Remove the dish from the refrigerator, lift the steak out of the marinade and transfer it to a clean plate. Season each side with a few generous pinches of salt and pepper, then let the steak rest for 30 minutes or until it reaches room temperature.
4. Heat an outdoor grill or indoor grill pan (or cast-iron skillet or griddle) to high heat. Cook the steak for 5-7 minutes per side — resisting the urge to move the steak as it cooks so that it can sear properly — until it reaches your desired level of doneness. (See temperature chart below.)
