1. Prep: Preheat grill and clean the grate.
2. Method: Break up the ground beef and evenly distribute the Worcestershire sauce and steak seasoning and olive oil if using).
3. Mix gently with your hands to distribute the seasoning and form into three balls. Gently press/pat into patties or use a burger press like I have pictured. If you make a slight depression in the center of your burger, it will help prevent it from puffing up in the middle.
4. Cook: Oil the grate. Season the outside of the burger patties with a light sprinkling of salt and pepper (both sides). Grill to your desired level of doneness. I like mine a little pink in the middle. Serve with your favorite extras but don't forget to count the carbs.

1. Season the beef patties with salt and pepper. Cook them on a cast iron griddle over medium-high heat to your desired doneness. I cook them to medium, about 3 minutes per side. You can also grill them.
2. Transfer the cooked patties to a plate and allow them to rest, loosely covered in foil, for 5 minutes.
3. While the meat is resting, assemble the remaining ingredients.
4. To assemble the "sandwiches," grab two plates. Place one cooked patty on each plate. Spread it with mustard (or use mayo if you'd like). On top of the mustard, layer the lettuce, onion, tomato, cheese, and then top with another cooked patty. Serve immediately, with extra napkins. :)

1. In a mixing bowl, combine the ground beef, lemon juice, garlic, salt, pepper, onion powder, and cayenne. Mix to combine.
2. Divide the mixture into 4 portions, rolling each into a ball, then flattening them into patties.
3. Grill or pan fry the patties to your desired doneness, adding cheese in the last 30-60 seconds if desired. Allow them to rest for 5 minutes before building the burgers.
4. Place each cooked burger on a large piece of green leaf or bibb lettuce. Top with burger sauce, your choice of sliced tomato, red onion, pickles, or your favorite burger toppings. Wrap the lettuce up over the top and serve.

1. Start by making the sauce. Combine all of the sauce ingredients in a bowl and mix well with a whisk. Refrigerate while you make the burgers.
2. Form beef into burger patties. You want very thin patties, about 1/4 inch thick. 1 lb of beef will make about 4 of these patties. They will be very large and thin (but will shrink a lot when cooking). Season the patties with salt and pepper on both sides and set aside.
3. Slice onion as noted and heat a medium skillet over medium-low heat and add 1 tbsp of ghee. Add the onion to cook, stirring occasionally, until browned and caramelized. This should take about 15 minutes and be finished about the same time as the burgers. If they cook to fast or finish early, just simmer on low until the burgers are ready.
4. Prep the toppings for the burgers as noted. For the buns, cut the iceberg lettuce head into fourths. Cut off the bottom "stem" of each wedge of lettuce. Remove the thick inner pieces, leaving the outer leaves. You'll split these leaves to form your top and bottom "bun".
