Bubble and squeak is a traditional British dish that is a comforting and delicious recipe to make with leftover vegetables. Finely dice the onion. Cut the bacon into thin slices. And slice/shred the Brussels sprouts. Warm the butter in a small (8 inch) nonstick skillet over a medium-high heat and add the onion and bacon.
Melt butter in a pan with a little oil and add in the bubble and squeak. Fry for 5-7 minutes, then ruffle the top of the bubble and squeak with a fork. Brush with a little melted butter and oil and place under a hot grill until golden brown. Top with crispy bacon, poached egg and parsley before serving.
Darker green veg like Savoy cabbage and Brussels sprouts make the most flavourful Bubble and Squeak. Bake (or fry) until golden and crispy. The crispy bits are the best ;O)
