Amish Apple Bread is a quick bread which simply means it does not have yeast in it. There’s no time waiting for the bread to rise, you can mix then bake it. This recipe is super simple. You can mix it together in no time. However, it does take 50 minutes to bake in a loaf pan. This recipe doesn’t make a large loaf, which personally I like.
This gluten-free mock apple bread uses zucchini to keep it low in carbs. Preheat oven to 350°F. Use a 9×5-inch loaf pan and spray with non-stick spray or line with parchment paper. I prefer to use parchment paper so it’s easy to remove the loaf from the pan after baking. Mix Sukrin Gold and cinnamon together in a bowl. Set aside.
Pour half of the apples over the batter in the pan, then spread on the remaining batter. Top with the remaining apples and press the apples down slightly. Sprinkle the brown sugar and cinnamon mixture over top of the bread. Bake at 350F for 1 hour, or until a toothpick inserted into the center comes out clean.
Two cups of apples are almost two medium apples. Of course, you can add two apples, but I want to give you the exact measurements. At two cups, it was the perfect bread to apple ratio.
