Dudhi chi bhaji recipe – easy Goan recipe of lauki (bottle gourd or opo squash) sabzi with coconut and other spices. First rinse the dudhi (lauki) very well in water. Then peel it. Chop the dudhi. Avoid chopping in small pieces. You will need about 2.5 cups of chopped lauki. Heat 1.5 tablespoons oil in a pan. Keep the heat to a low.
Add the dudhi cubes and boil for 5-7 minutes until the pieces are soft but retain shape. They may be some water left over, but do not drain it OR microwave for 3 min on high. Add masala powder to the cooked gourd pieces in the same pan.
The bhaji is mildly spiced with green chilies. Fresh grated coconut gives a nice sweet taste which accompanies the bland taste of lauki very well. I prefer to make succh bhaji recipes as they are quick to make and flavorful too. I have shared many such simple recipes with various veggies like: Tambdi bhaji.
This bhindi bhaji is super simple and easy to make that gets ready in 30 mins only (from prep to finish). This is a dry vegetable preparation from Maharashtra. In Marathi language, it is called bhendi chi bhaji. You’ll need only 10 ingredients (plus, salt).
